How to Make Crockpot Scalloped Potatoes
This recipe is simple and perfect for beginners.
Step 1: Slice the Potatoes
Wash and peel potatoes if desired.
Slice them thinly and evenly. About ⅛ inch thick works best. A mandoline slicer helps, but a sharp knife works too.
Try to keep slices even so they cook at the same rate.
Step 2: Make the Cream Sauce
In a skillet or saucepan, melt butter over medium heat.
Add chopped onion and cook until soft, about 4 minutes.
Add garlic and cook for 30 seconds.
Stir in flour and cook for 1 minute while stirring.
Slowly pour in milk and heavy cream. Keep whisking until smooth.
Add:
- Cheddar cheese
- Parmesan cheese
- Salt
- Black pepper
- Paprika
- Thyme

Pour some sauce over the top.
Repeat layers until everything is used, ending with sauce on top.
Spread evenly.
Step 4: Slow Cook
Cover and cook:
- Low for 6 to 7 hours, or
- High for 3 to 4 hours
Potatoes should be fork tender when done.
Step 5: Rest Before Serving
Turn off the heat and let the potatoes sit uncovered for 10 to 15 minutes.
This helps the sauce thicken and settle.
