German Carrot Salad
This German carrot salad is very fresh, crunchy, and refreshing, made bright and pretty with shredded pink lady apple. With an interesting ginger note, this salad is a great side, especially with a deli sandwich.

Keep Screen Awake
- 2 tablespoons vegetable oil
- 2 tablespoons lemon juice
- 2 teaspoons honey
- 1/2 teaspoon salt
- 1/2 teaspoon grated fresh ginger
- 1 pound carrots, peeled and coarsely shredded
- 1 medium pink lady apple – cored, peeled, and coarsely shredded
- 2 tablespoons chopped hazelnuts or walnuts
- 1 tablespoon fresh parsley
Directions

Whisk together oil, lemon juice, honey, salt, and ginger in a bowl until combined. Add carrots and apple; toss to combine.

Cover and marinate in the refrigerator for at least 1 hour before serving.
